Routine inspection conducted at this date

- Hand washing stations fully supplied. Staff hand washing observed during this inspection.
- QUAT sanitizer with residue of 200-400 ppm in sani- buckets available. Wiping cloths properly stored inside buckets.
- 3- comp sink also noted have 200 ppm QUAT sanitizer in the sink at the time of this inspection. Implements stored properly.
- Walk in freezer measured at -19C and properly maintained.
- All other freezers measured at or below -18C including cake diplay freezers at front and blast freezers.
- Under counter coolers and cook line cooler with inserts measured at or below 4C. Milk cooler also measured below 4 degree C.
- Hot holding measured above 60 degree C for meet, gravy etc.

General sanitation:
- Floors noted clean.
- Range hood exhaust noted clean and maintained.
- Ice maker observed clean and ice scoop stored in proper manner.
- General surfaces properly maintained.
- No obvious sign of pest activity noted at this date.
- Soft ice cream makers and nuzzles noted clean.
- Mop sink noted clean and mop bucket empties when not in use.
- Staff hygiene noted overall good.
- Customer and staff washroom maintained.
- General storage noted clean.
- Sanitation plan posted on kitchen wall and is to be followed.

Kitchen well lit.
If wash and dry cloths on site, high heat setting is to be used to dry and sanitize cloths. Ensure at least 20 minutes of heat dry time.
