Observation (CORRECTED DURING INSPECTION): A metal wire shelving unit containing clean equipment was observed stored directly in front of the mop sink, which lacked an enclosure.
Corrective Action(s): Operator moved the shelving unit to an alternate location away from the mop sink during the inspection (Corrected).

Ensure clean equipment is located away from sources of potential contamination (e.g. mop sink). Recommend ensuring the mop sink has a physical enclosure made of durable, easy to clean, and smooth materials in the future.

Observation (CORRECTED DURING INSPECTION): Rodent droppings were observed under the shelving unit near the empty chest freezer.
Corrective Action(s): Operator removed the rodent droppings during the inspection. Mechanical traps were setup in the facility.

Monitor for signs of recent pest activity (e.g. rodent droppings), clean and sanitize all affected areas to remove rodent droppings, continue with your pest control program (servicing of mechanical traps), sealing any potential entry points/holes in the building, keeping the floor and equipment clean, covering dry food in pest-proof containers, and keeping the doors closed between use.

Comments

Permit to operate was posted.
-Facility is open for take-out only.
-Handsinks (in the kitchen and both washrooms) were supplied with liquid soap, hot and cold running water, and single-use paper towels.
-Operator was washing their hands properly during the inspection.

-Refrigeration units in use (two upright single-door coolers and prep cooler upper and lower compartments) were at or below 4 degrees C.
-Upright freezer temperature was satisfactory.
-Refrigeration units were equipped with thermometers.
-Third upright single-door cooler was empty of food and had a sign indicating it requires repair. If this cooler is to be used in the future, ensure it is maintained at or below 4 degrees C prior to re-stocking it with potentially hazardous food.
-Chest freezer was empty of food. If this freezer is to be used for storage of frozen food in the future, ensure it maintains a temperature at or below -18 degrees C.
-No hot-holding of food was occurring at the time of inspection.
-Food storage areas appeared clean and organized.

-100 ppm chlorine sanitizer was available inside a labelled spray bottle.
-100 ppm chlorine sanitizer was available inside the third compartment sink unit.
-Manual wash, rinse, sanitize, and air dry method was reviewed with the Operator.
-3-compartment sink was supplied with hot and cold running water and sink plugs. Only take-out single-service utensils are used on-site.
-Operator with valid FOODSAFE Level 1 training (expiration date: June 16, 2023) was present on shift. Ensure to renew your FOODSAFE Level 1/equivalent course training by prior to the expiration date (refer to the www.FOODSAFE.ca website for information on the FOODSAFE Level 1 refresher course).
