Observation:
The back room has a fly problem. The flies are not identifiable.
Corrective Action(s):
Immediately hire a professional pest control company in to identify the pest and to treat/eliminate accordingly. Follow all recommendations made by the pest technician. Eliminate all pooling water sources each night and clean to remove all food debris on all surfaces.

Observation:
The back room, 2-comp sink has a leaking waste pipe. A bucket has been placed under the pipe to catch the dirty water leaking out. This is attracting and breeding pests.
Corrective Action(s):
Immediately repair/replace the damaged waste pipe so that it no longer leaks. Wash with hot water, soap and bleach, the waste pipes to remove any accumulated food debris or water. This will help eliminate the pest/fly problem.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C; freezer was -19C; thermometers present; and temperatures recorded twice a day.
- High temperature dishwasher rinse cycle was 72.2C at the plate's surface, as per max/min thermometer. Staff record rinse temperature (on gauge) twice a day and it shall be 180F or hotter. The records show that the temperature is only 110F. Ensure staff are recording the temperature when the dishwasher is running, and during the rinse cycle as the thermometer increases when it is in the rinse cycle.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- FoodSafe certified staff present with.
- Foods stored in food grade containers; covered; date coded; in groups; and 6" off the floor on shelves or in cupboards.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good.
- Bleach present for sanitization, but no solution mixed-up at time of inspection.
