Observation (CORRECTED DURING INSPECTION): Dishwasher does not reach a sanitizing temperature at plate level. Gauge reads up to 90*C but sanitizing temp is not reaching dishes according to min/max thermometer and thermolabels. You may sanitize dishes using 100 ppm bleach. Repair dishwasher.

Observation (CORRECTED DURING INSPECTION): 1) Kitchen hand sink was used to stack dirty dishes.
2) Area around hand sink had multiple open pots of sauce, and small shelf attached to side of cooking equipment further blocks access. Remove wooden shelf. keep handsink easy to access at all times.
