Observation (CORRECTED DURING INSPECTION): - Small container of queso fresca and package of goat cheese which were stored on ice; however, not in direct contact with ice were >4C and had been stored in this way for >2hours.
- Internal temperature of products:
- queso fresca 14.6C
- goat cheese 16.9C
Note: Cut vegetables (cucumber and tomato) stored with container directly on ice were <4C.
Corrective Action(s): - Products were discarded by Manager at time of the inspection.
- Potentially hazardous foods must be kept at 4C or colder. Only limited quantities of food for limited quantity of time should be held on ice. Ensure container of product is fully submerged in ice water to maintain cold temperature and ensure temperature of food is monitored.

Comments

- General sanitation is satisfactory. Continue to ensure hard to reach areas of the floor (behind/under equipment and shelving) so that items which have fallen do not begin to accumulate.
- Handsink supplied with hot and cold running water, liquid soap and paper towel
- Coolers were operating at acceptable temperatures (4C or below)
- Walk-in cooler 3C
- Line cooler 4C
- Display cooler 4C
- Barista cooler 4C
- All coolers are supplied with thermometers
- Small chest freezer (kitchen) -21C
- Chest freezers (4) in storage room were maintaining product in a frozen state. Temperature of units were -18C to -23C
- Temperatures of coolers and freezers are being checked/recorded daily at opening. Temperatures are not consistently checked at closing - Manager to follow with staff.
- Walk-in cooler was organized with raw eggs stored beneath ready to eat items and with food items covered to prevent contamination.
- Back dry storage room organized with all food products off the floor and the majority of dry goods in pest proof containers
- High temperature dishwasher was operational. Final rinse temperature was 76.4C at dish surface. Manager reports dishwasher wash and rinse temperature are monitored; however, not currently recorded. Record temperature daily on log sheet.
- Quats sanitizer solution (200ppm) present in containers with in use wiping cloths for sanitizing food contact surfaces and counters
- Quats sanitizer available from dispenser at warewashing sink. Concentration from measured 200ppm.
- Pest control contract in place with service every two weeks. No signs of pest infestation noted at time of the inspection.
- Foodsafe requirement met at time of the inspection. Manager and additional foodhandler present have completed Foodsafe level 1.
