Observation (CORRECTED DURING INSPECTION): Cleaning cloths are not being kept in bleach water. Also prepared bleach was too strong. Use only 1-2 tbsp per gallon of water. Have bleach water prepared and clean surfaces before any food is prepared.

Observation: A few droppings noted in corners. Possibly old. Clean and monitor. Continue using traps.

Observation: Back door has large gaps underneath. Repair. putting a box against the door is not sufficient.
Also there is a large hole in the outside wall in the grill area beside the prep cooler. The screen has 1/2 inch gaps - these are too big and mice could get in. Use a screen with maximum 1/4 inch holes.

Observation: Many areas of kitchen require a thorough cleaning. Counters, counter and table edges, ice machine, freezer door, shelves, and floors under equipment throughout.

Fridges are < 4 Celsius..
Hand sinks are stocked.
Dishwasher has 100 ppm chlorine in final rinse.
Glass washer has 12.5 ppm iodine.
Major construction is occurring above bar - New apartment building. Actual bar is not affected at this time.
Owner indicates that the bar will be shut down for a period of time for renovations - new floors, maybe new equipment.
Ensure that you submit plans before you renovate.
