Observation (CORRECTED DURING INSPECTION): Cooked chicken breast was hot held with an internal temperature of 50C. It was discover later that the chicken breast was cooked in the oven with an internal temperature of 57C.
Corrective Action(s): Aforementioned chicken breast was reheated to 74C and hot held at above 60C. Ensure staff properly heat the chicken to an internal temperature of 74C before hot holding them.

Observation (CORRECTED DURING INSPECTION): 1. Dried piece of tomato observed on the blade of the vegetable cutter.
2. Bread knife with grease residue was stored in the knife holder at the front preparation area.
Corrective Action(s): 1. Clean and sanitize the vegetable cutter. Ensure food equipment is cleaned and sanitized properly after use.
2. Clean and sanitize the bread knife. Do not store any dirty knives in the knife holder.

- Coolers (milk, prep, under the counter, walk-in) maintained at 4C or less.
- Walk-in freezer functional.
- Other hot food hot held at above 60C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quats sanitizer available in pails and from the dispenser.
- High temperature dishwasher registered 82C at the plate level.
- 3 compartment sink available for manual dishwashing.
- Food products stored off the ground and organized.
- No pest activities observed at the time of inspection.
- Foodsafe requirements met at the time.
