Observation: 1. Chicken stored in the cooler across the grill measured at 7C. The operator noted that the cooler has recently been repaired. The cooler may be on defrost cycle.
2. Sprouts stored in the line cooler measured at 10C. Small portions of foods have been moved to the line cooler for brunch/lunch. The line cooler covers are kept closed after rush hours. The operator has put in a fan underneath the inserts to facilitate air circulation, but it was turned off at the time of inspection.
Corrective Action(s): 1. Monitor the temperature of the cooler and make adjustments accordingly.
2. Ensure that the fan that helps to circulate cold air is always turned on in the line cooler. Ensure that potentially hazardous foods such as sprouts and cheese are discarded if temperatuare is not maintained at 4C for more than 2 hours.

Observation (CORRECTED DURING INSPECTION): Noted dripping of water from condenser in the line cooler. Some foods (sausces) were left uncovered.

Observation (CORRECTED DURING INSPECTION): 1. Observed accumulation of old food debris/stains on the bottom of coolers and around gaskets.
2. Utensils/equipment are not maintained in a sanitary manner (kinves, sheet maker)
Corrective Action(s): Clean and sanitize the noted areas.

- 200ppm QUAT sanitizer spray bottles in place
- Low temp dishwasher achieved 100ppm chlorine at plate's surface
- Temperature log is in place
- Chlorine concentration in the dishwasher is monitored
- Walk-in cooler temperature measured <4C
- Hot holding (soup) measured >60C
- Ice machine is maintained in a sanitary manner
- No signs of pest activity noted at the time of inspection

*Scoops with handles shall replace the bowls that are used to scoop flour/corn flour. Ensure that the scoops are stored vertically to prevent the handles from contacting the foods.
