Observation (CORRECTED DURING INSPECTION): Frozen cooked chicken bones were thawing at room temperature. This product was at room temperature for less than 2 hours.
Corrective Action(s): Thaw frozen products inside walk in cooler. (Product was moved inside the cooler until ready for processing.)

Observation: Floor underneath the shelving units in the walk-in cooler have debris build up.
Corrective Action(s): Pull shelves away from the walls and clean underneath as well as the sides of the walls.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Butcher block still being used for cutting meat and vegetables. This type of cutting board is not of suitable design/material. Butcher block requires a lot of maintenance to ensure it is smooth and sealed properly.
Corrective Action(s): Use a different type of cutting board that is of suitable design/material to ensure the equipment is maintained in sanitary condition.

Observation: Paper towel dispenser in the cooking area is broken.
Corrective Action(s): Operator ordered replacement dispenser. Install new dispenser as soon as possible.

Comments

Hand sinks provided with liquid soap and paper towels.
Sanitizer (bleach) measured 100 ppm. Ensure to store all wiping cloths in this sanitizing solution.
Walk-in cooler was at 1-3 deg C.
Walk-in freezer was at or below -18 deg C.
Prep line coolers were at or below 4 deg C.
No hot holding yet at time of inspection.
Bar cooler was at 4 deg C.
Glass ware washer had chlorine residual of 100 ppm.
Dishwasher final sanitizing rinse reached 75 deg C at plate surface.
Temperature log was available and up to date.
Sanitizer (quats) for dining room tables was at 200 ppm.
Dry storage area was organized and food items were stored off the floor.
No signs of pests noted. Pest control contract in place.
Staff were wearing aprons and hair restraint.
Staff washrooms and public washrooms were in sanitary condition and provided with sanitary facilities.
General sanitation was satisfactory at time of visit.
