Walk in and prep cooler temperatures satisfactory. Reviewed food safety plan for chicken wings. Frozen food defrosted in cooler. Hand washing sinks in kitchen and in staff washroom have hot/cold water, liquid soap, and paper towels in dispensers. Staff wear uniform and manager on site has valid FoodSafe certification. Discussed renewal prior to 5 year expiry date. Triple sink and dishwasher (added in 2020) - dishwasher has a final sanitizing rinse of 50ppm chlorine - good. Quats sanitizer used on counters and food contact surfaces is automatically dispensed at about 300ppm - ok if label on the bottle states 200-400ppm. Cleaning - premises was re-modelled and surfaces are in good condition and are being cleaned routinely. Pest control monitoring in place. Monthly contract with licenced pest control - good. Recommend insect traps as discussed. Signature not required. Copy of report to be emailed to operator.
