Coolers (including milk dispensing units) are at 4 C or colder - good.
Soup hot holding is at 60 C or hotter - good.
Quats concentration is at 200ppm (for sanitizing wiping cloths, clean in place equipment, and work surfaces). Automatic dispensing container for quats is dispensing at proper concentration - good.
Spoons are stored in ice water (temperature below 4 C) and water is changed frequently.
Hand washing - liquid soap and paper towels are provided. Staff are hand washing at the sink with soap and paper towels. Non-latex gloves are also available.
See above regarding the faucet that is leaking.
Utensils are cleaned and sanitized at back of house kitchen.
Provide an email if renovating the double sink area as discussed.
Cafeteria
Walk in cooler is at 4 C. Prep cooler is keeping food in upper inserts at 4 C or colder (tuna salad and ham at 4 C). Lower compartment of prep cooler is empty. Reach in self serve cooler is at 4 C.
Hot holding temperatures (rice, beef wellington, veggie in phyllo, and soups) are at 60 C or hotter - good.
Hand sink has hot/cold water, liquid soap, and paper towels. Non-latex gloves are available.
Quats sanitizer is being dispensed at 200ppm. Solution is changed frequently.
Back of House
Walk in cooler is at 4 C. Temperature records are being kept.
Freezer - temperature is much colder at - 16 C. Seals were replaced.
Cleaning - improvements noted (some equipment has been moved). Continue to follow a routine written cleaning schedule.
Handwashing sink has liquid soap and paper towels.
Dishwasher is not in use. Single service only utensils, plates, and cups for customers. Two compartment sink is available. - see above.
Utensils and pots etc. are being washed, rinsed, sanitized (200ppm quats), and air dried using 2 compartment sink. |
