Observation (CORRECTED DURING INSPECTION): Small quanitites of potentially hazardous food were observed within the right prep cooler and were measured at an internal temperature of 13 degrees C. This included a third of a small insert of tuna, and one bag of guacamole. It was stated that food items were stored in cooler for over two hours.
Corrective Action(s): Potentially hazardous food items discarded by staff. Ensure cold potentially hazardous food is maintained at 4 degrees C or less in order to limit the growth of potential pathogens and potential production of toxins.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Two sanitizer pails contained sanitizer at a concentration of 50 to 100 ppm quats. Sanitizing solution and cloths appeared soiled.
Corrective Action(s): Sanitizer pails were emptied and refilled at the dispenser, and tested at 400 ppm quats. Clean wiping cloths provided. Test strips available on site. Surfaces such as cutting boards were re-sanitized at time of inspection. Ensure sanitizer is changed as often as needed in order to maintain sanitizer at safe and effective concentrations (for example, 200 to 400 ppm quats). Note: Ensure sanitizer does not exceed 400 ppm quats.

Corrective Action(s): Have above-noted cooler serviced so that it is capable of maintaining food at 4 degrees C or less. Ensure potentially hazardous food is not stored in this cooler until such time. Date to be corrected by: April 6, 2023.

General sanitation satisfactory. No signs of pest activity observed at time of inspection.
Temperature logs provided at time of inspection list only the walk-in cooler/freezer. Ensure all cooler units are included as part of the temperature logs.
Permit posted.
Contact the Environmental Health Officer for re-inspection once above-noted outstanding violation has been corrected. Follow-up on or before April 6, 2023.
