Observation (CORRECTED DURING INSPECTION): Quats solution for manual dishwashing registered at 50-100 ppm. Staff manually add 2 pumps of quats concentrate to water.
Corrective Action(s): Ensure solution is made between 200-400 ppm as per manufacturer's recommendation. Staff added one more pump of the quats concentrate and then the solution registered at 200 ppm.

Observation: Walk-in cooler dirty with old food spills. Behind and underneath equipment in back storage area requires cleaning.
Corrective Action(s): Clean above mentioned areas. Increase frequency of cleaning, focusing on hard to reach areas.

Comments

Routine Inspection:

-Front and back hand washing sinks equipped with hot and cold running water, liquid soap, and paper towels.
-Three-compartment sink used for manual dishwashing. Ensure quats are used as per manufacturer's recommendations (between 200-400 ppm).
-Sanitizer solution in bucket registered at 400 ppm.
-Walk-in cooler at 7 C (must be 4 C or below). Temperature of food was between 0-4 C. Staff stated cooler had been opened and closed to restock the front coolers. Check again in 1 hour. Adjust temperature setting if necessary.
Note: The leaking water is diverted into a pipe and caught in a container preventing food from contamination - good.
-Walk-in freezer -18 C.
-Under grill cooler drawers registered at 6 C. Ensure temperature drops to 4 C within the next hour. Inspection was carried out right around lunch rush. Foods in top drawer were 0 C. Foods in bottom drawer were at 6 C - ensure these are used within 2 hours, after which they must be re-located to a cooler at 4 C or below or discarded.
-Cooler with inserts at 5 C (must be 4 C or below). Check again in 1 hour. **Do not overstock the inserts - only fill half way.**
-Beverage cooler at 4 C.
-Hot hold rice greater than 60 C.
-Temp logs maintained.
-Permit to Operate posted in a conspicuous location.
