Corrective Action(s): Ensure the gap under the screen is sealed to prevent possible pest entry. Discussed addition of a rubber door sweep to close the gap.

- Hand sinks and washroom supplied with liquid soap, paper towel and hot and cold water
- High temp dishwasher installed and noted at 79.9 C at the plate
*Premises is able to have more then 10 seats again
- Spray bottle had 200 ppm chlorine
*Ensure sanitizer bottles are re-labelled, original labels wearing off. Corrected during inspection.
-Food appears protected - covered and stored off the ground. No food noted thawing at room temp
- No signs of pest activity noted during inspection
- General sanitation excellent

REMEMBER:
1.proper cooling of hot food / broth is from 60 to 20 C at room temperature in 2 hours then 20 C to 4 C in 4 hours in the cooler. Must be done in small portions, or using an ice band and/or ice wand.
2.Clean all equipment with food debris every 4 hours
