Observation (CORRECTED DURING INSPECTION): - In use wiping cloth kept in container of quats sanitizer solution; however, concentration was <200ppm.
Corrective Action(s): - Ensure sanitizer solution is replaced at interval needed to ensure concentration is at adequate level to effectively sanitize surfaces. Use test strips to verify concentration.
- Corrective action taken at time of inspection: Quats sanitizer solution was refilled. Concentration was checked and confirmed to be 200ppm.

Observation: - Operator not present and neither staff present have completed Foodsafe level 1 or equivalent. In the Operator's absence, at least one staff member present must have Foodsafe level 1 (or equivalent)

Comments

- Premises maintained in sanitary condition
- Hot and cold running water was present at sinks
- Liquid soap and paper towel present at handsink and at 3 compartment dishwashing sink *Load paper towel in dispenser at dishwashing sink
- Observed frequent handwashing by foodhandling staff
- 3 compartment sink set up and in use for manual dishwashing. Quats sanitizer solution from dispenser and in compartment used for sanitizing measured 200ppm. Quats test strips present.
- Coolers were operating at 4C or colder and freezer was maintaining product frozen:
- Walk-in cooler 3C
- Sandwich line 3C (meat/cheese side) 4C (veggie side)
- Beverage cooler 0C
- Freezer -10C
- Hot held foods (soup, meatballs) were maintained above 60C
- Foods were stored in a manner to prevent contamination. Wrapped/covered and stored off of the floor.
- No signs of pest activity noted at time of the inspection
- Staff/public washrooms maintained and supplied with liquid soap and paper towel

Attention needed:
- Temperature records were completed for today; however, readings were missed in prior days. Ensure temperatures are checked and recorded at the frequency specified in food safety procedures.
