Observation (CORRECTED DURING INSPECTION): 3 containers of solidified fat/lard (chicken, beef, lamb) were stored at room temperature - discarded at time of inspection. Operator to always ensure the chicken, beef, lamb lard that is made from donair cone drippings is always stored at 4 deg. C or less.

Comments

-Hand wash stations had soap, paper towel, hot and cold running water.
-100 ppm chlorine sanitizer available in spray bottle
-Prep cooler and prep display cooler at 4 deg. C and 3 deg. C (respectively)
-chest freezer -18 deg. C
-Good general sanitation and organization.
-No signs of pest activity. Back door closed at time of inspection
-Beef, lamb, chicken donair spinning on spit. Second cook step done in microwave.
-Manual ware washing procedures reviewed at time of inspection. No concerns.
