Observation (CORRECTED DURING INSPECTION): Rice scoop and other in-use utensils were again, held in water at room temperature.
Corrective Action(s): Staff placed all in-use utensils in ice water at time of inspection. Ensure to change this water and wash scoops adn contanier every 2 hours. Future non-compliance may result in further enforcement actions.

Observation (CORRECTED DURING INSPECTION): No paper towel available at hand washing station in main kitchen area.
Corrective Action(s): Corrected at time of inspection. Ensure all handwashing stations are always properly supplied.

Observation: Lots of food items in coolers and freezers were stored uncovered.
Corrective Action(s): As discussed during previous inspections, all food must be stored properly covered to protect from contamination.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Frozen meats were stored on countertop and in sink with no running water.
Corrective Action(s): All meats on countertop were moved to the walk-in cooler at time of inspection. Meats were still frozen - OK. Operator turned on cold running water for meat thawing in sink at time of inspection. Operator stated frozen meats had just been delivered - invoice was available.
**As previously discussed, only defrost frozen foods in the refrigerator or under cold running water at or below 4C.

Comments

- Hand sink at front server station and in staff washroom were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Bleach sanitizer solution available at 200 ppm in spray bottle and in bucket for storing wiping cloths. Ensure front server area is also supplied with bleach sanitizer solution bucket for wiping cloths.
- High-temperature dishwasher reached 71C at dish surface during rinse cycle - good.
- Upright freezer, chest freezer, and domestic freezer were measured to be at -18C or colder
- Walk-in cooler, prep cooler, and coolers in front area were measured to be at 4C or colder
- Hot holding of rice was measured to be above 60C
- Accurate thermometers available
- Only a small portion of bean sprouts were stored in cold water at room temperature at time of inspection. Temperature of bean sprouts was under 4C. Good. Ensure bean spouts are used up within 2 hours.
- Food storage practices require improvement - all food must be properly covered.
- General sanitation is good
- Ice machine was not in use at time of inspection
- No signs of pest activity noted at time of inspection
- Operator has taken Foodsafe Level 1 refresher course - certificate available.
*Ensure to keep daily temperature logs.
