Observation (CORRECTED DURING INSPECTION): Upright domestic fridge not keeping food 4 C or less. Crabmeat mix for sushi at 10 C.
**Magnetic seal on door damaged and dislodged. Door struggles to stay closed.
Corrective Action(s): Discarded potentially hazardous (PHF) food (crab meat mix). Do not store PHF's in this unit until it is fixed and keeps food below 4 C.
**Replace magnetic seal.

Observation: 1) Freezer lid used as food prep surface/work counter. Vinyl layer placed and duct taped on top. Surface is excessively dirty. Duct tape has deteriortated and food debris building up over entire surface.
2) Shelf next to freezer is deteriorated/falling apart. Particleboard is flaking and can potentially get into food.
3) Wall behind freezer littered with food debris, flaking paint, and damaged areas.
4) Makeshift shelves for containers behind dish sinks and above grease trap not acceptable.

Corrective Action(s): 1) Replace vinyl surface and properly afix replacement to freezer lid or do not use as work surface. Improve cleaning practices. The use of duct tape as part of a work surface is not acceptable. This must be done by noted re-inspection date on report.
2) Discard this shelving unit.
3) Repair wall in this area by follow up inspection date.
4) Better expose grease trap area and improve cleaning. Contruct proper shelving unit(s) in this area as discussed. Complete work in this area by re-inspection date.

Comments

- Sanitation plan needs to be revisited - Staff struggle to follow acceptable cleaning strategies due to many areas suffering excessive or near excessive deterioration. To be discussed at follow up inspection date noted on report.
- A plan is needed to phase out or repair old work surfaces, shelves, walls and floors and general work environment to facilitate easy cleaning and maintenance. To be discussed at follow up inspection date noted on report.
- Do not turn off sushi bar at night and turn on again next morning. Leave on at all times and continue to monitor temperatures multiple times throughout day. All temp. monitoring should be documented.
