304 - Premises not free of pests [s. 26(a)]
Observation: - Mouse droppings noted on floor along west wall under storage shelving and in uncovered electrical access panel. Droppings also noted in cabinet where packaged single service containers are stored.
- Flies noted in back prep/dishwashing storage area
Corrective Action(s): - Clean up droppings and disinfect areas.
- Continue to keep floor area clear to facilitate cleaning and monitoring (This has improved since the previous routine inspection).
- Continue to keep food in pest proof containers,
- Maintain contract with Pest Control Technician and increase service if current service is not effective in decreasing/eliminating rodent activity.
Note: Pest Control contract currently in place with monthly service. Viewed service report from most recent service (19-March-2019). Pest Control Technician should provide summary of findings and summary of service in report (ie. number of rodents caught, identification of entrance and harbourage areas, and measures for Operator to take to address issues)

Observation: - Gap noted in wall where electrical access panel is located on west wall behind storage shelving. Cover to panel is missing and rodent droppings noted in this area. This appears to be an access point.
- Ceiling tiles missing over walk-in cooler and near pop syrup storage shelving (back door). These openings can allow access by pests.
Corrective Action(s): - Seal gap in wall and cover electrical access box.
- Replace missing ceiling tiles. [Correction date: 19-Apr-2019]

- General sanitation of premises was satisfactory
- Hot and cold running water, liquid soap and paper towel present at handsinks and in staff/public washrooms
- Walk-in cooler 4C
- Self serve drink cooler 2C
- Walk-in freezer -18C
- Foods stored in sandwich line at 4C or colder
- Soup in hot holding unit maintained at safe temperatures (>60C)
- Chicken and wild rice 67C
- Tomato basil 71C
- Meatballs in hot holding unit were 64C
- Temperature monitoring records were up to date and appear consistent.
- Quats sanitizer present in spray bottle at front service counter and from dispenser at 3 compartment sink. Concentration measured 200ppm
- Floor area kept clear. Dry storage areas organized with items off of the floor.
- Supervisor present holds valid foodsafe level 1 certificate.
