Observation (CORRECTED DURING INSPECTION): - Raw chicken stored directly above lettuce in walk-in cooler
- Frozen breaded chicken stored next to ice cream in ice cream freezer, both uncovered.
Corrective Action(s): - Always store raw meats below ready-to-eat items
- If storing breaded chicken next to ice cream, both must be covered to protect from possible contamination.

- Hand sinks properly supplied
- Sanitizer buckets were being changed at time of inspection; 200 ppm Quat detected
- High-temperature dishwasher reached 76C at dish surface during rinse cycle - good
- All coolers were at 4C or colder
- All freezers were at -18C or colder
- All hot held items were at 60C or hotter
- Dipper well in use for ice cream scoops
- Ice machine clean, all other equipment were also observed to be clean
- Sauces in chicken battering/breading station were covered - good.
- Dry storage areas satisfactory; no scoops stored directly in bins - good.
- General sanitation satisfactory
- No signs of pest activity noted at time of inspection
- Main cook has updated Foodsafe certification - good
