Observation (CORRECTED DURING INSPECTION): QUAT sanitizer was measured 0ppm.
Corrective Action(s): Fix the dispenser to dispense 200ppm QUAT solution.
Operator switched to using chlorine sanitizer at 100ppm at the time of inspection.

- walk-in cooler at the back
- behind shelving units
- in between equipment

Comments

High temperature dishwasher was measured at 72.1C
All coolers were measured at 4C or below.
All freezers were measured at -18C or below.
All handsinks in the food preparation areas were equipped with soap/paper towel and hot/cold running water.

Discussed the following:
- installing weather strips on the outside doors to prevent entry of pests
- fixing the QUAT sanitizer dispenser
- cleaning and sanitizing the tongs that are being used in the front at least every 4 hours
