Observation (CORRECTED DURING INSPECTION): Deli display cooler and pastry cooler both measured above 4 C. Noted at range around 6 C. Operator stated the refrigeration technician was just there. Pastry display cooler heavily frosted. To be defrosted this weekend.
Corrective Action(s): Have service technician return to look at both display coolers as discussed. Monitor this unit for temperatures. If unit doesn't maintain 4 C or less, then have it serviced. Operator to start charting temps.

Observation (CORRECTED DURING INSPECTION): Chemical feed system for multi-quat not working adequately. Measured at 0 ppm. Possibly due to lack of chemical in container or similar. Spray bottles not registering residual. Bleach buckets filled and measured at 100 ppm.
Corrective Action(s): Have technician fix quats auto feed.
*When fixed use this solution for tongs and replace solution after each meal service.
Re-inspect for above fixed. See date noted on report.

General sanitation and organization pretty good. Make sure shelves moved and cleaning is performed around legs of equipment as discussed.
No date labelling performed for in-house packaged cheeses. Recommend.
Dishwasher at good levels 100 ppm.
handwash facilities good.

Ice machine needs a cleaning.
