Observation: - Food debris, spills, and grime noted on the floor in hard to reach areas: under shelving, under equipment, behind garbage bins, under warewashing sinks and dishwasher
Corrective Action(s): - Thoroughly clean/scrub floor paying particular attention to edges. Ensure all debris and grime is removed. [Date to be corrected by: 22-July-2021]

Comments

Handsinks in food preparation/service area supplied with liquid soap and paper towel
- Coolers were operating at acceptable temperatures (4C or colder):
- Walk-in cooler 4C
- Beverage display cooler 4C
- Sandwich line cooler 3C
- Undercounter cooler (drive thru) 4C
- Undercounter cooler (left service counter) 3C
- Undercounter cooler (raw eggs in back) 3C
- Raw eggs in walk-in cooler stored in designated area away from ready to eat foods
- Walk-in freezer -15C
- Hot holding of potentially hazardous foods was at acceptable temperatures:
- Soups 73-75C; Eggs 74C; Potato wedges 82C; Breaded chicken 82C
- High temperature dishwasher was operational and met required sanitizing temperature. Final rinse measured 72.7C at dish surface. Ensure rinse temperature is monitored via gauge. Temperature at gauge should be 82C or higher during rinse cycle.
- Quats sanitizer solution present from dispenser at warewashing sink and in sani pails with wiping cloths. Concentration of solutions tested measured 200ppm.
- No signs of rodent activity noted at the time of the inspection. Pest Control contract in place with monthly service.
- Staff/public washrooms supplied with liquid soap and air dryers for handwashing.

- Tim Hortons cleaning procedures for customer seating area specify use of Multi-surface peroxide cleaner/disinfectant. Product was available on-site; however, was not in use as Mgr reported there was no spray bottle present. Ensure cleaning protocols are followed and appropriate supplies are present to adhere to procedures.
