Observation (CORRECTED DURING INSPECTION): Condiments cooler too warm - food temperature for inserts and foods in below counter cabinet 10C - 12C (chicken kabobs, beef kabobs, tomatoes, cucumbers, tzatziki sauce)
Corrective Action(s): .
All potentially hazardous foods above 4C for greater than two hours to be discarded and all other items relocated to alternate cooler space.
If this unit is used during peak periods inserts must only be 1/2 filled, kept on ice and temperature logs kept so that any food out longer than two hours is discarded.
DO NOT keep any foods in this unit during prep or between peak periods.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation: Three buckets of frozen prawns sitting in cool water (10C) in pot sink, each bucket has two packages of unwrapped thawing prawns in them.
Corrective Action(s): Prawns need to be fully immersed in the buckets and have cold running water to flush bacteria and contaminants away; only 1/2 the prawns to be taken out at a time (three packages) the rest are to be left in the cooler until the first batch or thawed prawns has been processed.
THIS PROCESS IS TO BE FOLLOWED FOR THAWING ALL FOODS/SEAFOOD.

Observation: Food/grease accumulations under and sides of steam table prep counter, rangehood filters, left side of grill (between wall and grill), walls where food splatters/spills etc.
Toilets in both the men's and women's public washrooms had mould in toilet bowls and dried urine on toilet seats.
Corrective Action(s): .
Premises needs a thorough cleaning where food spills/splatters and grease accumulations.

Observation: Condiments cooler not able to maintain a food temperature of 4C either in the box of the cooler or for the inserts on top.
Corrective Action(s): .
This unit is to be taken out of service until such time as it is repaired/replaced.
This unit is not to be placed back in service until written approval is received from Fraser Health Authority.

NOTE: The only time this unit can be used is during peak periods (lunch period - 11:30 a.m. to 1:30 p.m. and the dinner period - 6:00 p.m. to 8:00 p.m.) and all foods placed in the cooler for these peak periods are kept in ice and discarded after this two hours. DO NOT return to the walk-in cooler.
Make sure that any inserts used during these peak periods are only 1/2 filled and replaced often.
