Follow up inspection:
Information previously dropped off regarding food safety plans for roast beef.
Operator and kitchen manager are registering to update their Food Safe certificates. After taking FoodSafe (or equivalent) will update their food safety plan.
Deli display cooler is at 4C/ 40F or colder (was serviced after last inspection). Food is brought out of walk in in small volumes. Two thermometers for verifying temperature of cooler - good!
Manager and Operator are working on food safety plans for roast beef - previous temperature time chart provided.
Keep daily fridge and hot holding temperature records.
Chlorine containers - labelled. Reviewed procedures for sanitizing.
Poster posted - for 4 step method showing sanitizer concentrations.
Wiping cloths - good (chlorine is not mixed with detergent).
Cleaning - much improved, including painting of walls - good.
Continue to follow a written, routine cleaning schedule.
