306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Kitchen food prep area is too dirty in the hard to reach areas (floor under counters, behind garbage bins, in the corners). Some of the more deteriorated cupboards also suffering from cleaning neglect. Rat droppings observed in these hiding spots. Difficult to assess current or artifact.
Corrective Action(s): The kitchen needs a solid re-clean and staff need to buy into getting to the corners and hard-to reach- areas. Cleaning schedule posted, but tasks incomplete. Make sure staff are held accountable to the function of cleaning as discussed.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Some of the cupboards in the front are in bad condition and the particle board underneath the plastic laminant is flaking, not to mention bloating from moisture damage. This makes proper and thorough cleaning the general environment difficult to impossible.
Corrective Action(s): Develop a plan and timeline to replace.

Comments

Two new coolers purchased and placed in back storage area of premises. They look great and can be used to reduce the burden of storage in the front display cooler. Use them for more than veges etc.

Front cooler ok - make sure to find that 1 to 4 C range so product doesn't freeze, but maintain safe temp.

Make sure kombucha sani-bucket is properly filled at the beginning of the day with bleach solution AND changed regularly if cloths are kept inside.
**Residual should be 100 to 200 ppm

Bleach spray bottle measured high (+200 ppm) and the spray bottle function is marginal. Monitor on both fronts.
