Observation (CORRECTED DURING INSPECTION): No chlorine sanitizer detected in the wiping cloths buckets.
Corrective Action(s): You must use either 100-200 ppm chlorine bleach santizier or 200 ppm quats sanitizer solution to sanitize work surfaces and all
food contact surfaces. Surfaces must be cleaned using an approved cleaner prior to sanitizing.

Dishwasher final rinse tested 100 ppm chlorine. The dishwasher is equipped with a booster.
Wash water temperature at 41 C. Must be minimum 60 degrees C for proper washing.
