Front/service:
- Ensure that the glass washer at 12.5 ppm of Iodine prior to use.
Hand washing stations supplied with liquid soap, paper towels and hot/cold running water.
Surface sanitizer in spray bottles and bucket = 200 ppm.
All under-counter coolers maintained at 4 degrees Celsius (40 degrees Fahrenheit) or below.
Note: Glass washer is not in service at the time of inspection. Service is in a progress (a back flow preventer issue). Please use the kitchen dishwasher for glasses until the service is done.

Kitchen:
Hand washing stations supplied with liquid soap, paper towels and hot/cold running water.
- All coolers maintained at or below 4 degrees Celsius (40 degrees Fahrenheit).
- All freezers maintained below -18 degrees Celsius (0 degrees Fahrenheit).
- Hot holding unit (soup) at 74.5 degrees Celsius.
Surface sanitizer QUAT in spray labeled bottles and bucket = 200 ppm.
High temperature dishwasher sanitizing at 85.7 degrees Celsius at dish level after final rinse cycle.
Ventilation canopy - satisfactory (Note: The manager on site claimed that the regular cleaning will be done whishing 2 month/ensure that a sticker is posted).
General food storage practices - good:
- All food items covered and protected from contamination.
- All food items stored off the floor; and organized on shelves.
Note: Raw meats stored separate from ready-to-eat foods.
Overall cleanliness and maintenance - good.
Pest control in place. Traps are set and empty.
No signs of pest activity at the time of inspection.
