Observation (CORRECTED DURING INSPECTION): The sanitizer pails in the preparation area had 50-100 ppm QUATS. A staff member was observed re-filling the buckets but the concentration was still measured to be at 100 ppm QUATS.
Corrective Action(s): Staff was asked to use their test strips to check the concentration of the sanitizer before re-filling buckets. The dispenser should be run in the sink until 200 ppm QUATS is measured and then the buckets/bottles should be filled. Staff re-filled the buckets at the time of inspection. The dispenser achieved 200 ppm QUATS after about 30 seconds.

Observation: Unlabelled steel containers are being used for holding sanitizer on preparation counters.

Comments

Routine health inspection conducted.

Temperatures:
- Walk-in freezer was at -19C
- Walk-in cooler was at 2C.
- Prep cooler (inserts) was holding food at 4C or less.
- Hot holding units (2) were holding soup and gravy at 60C or more.
- All units had accurate thermometers.

Sanitation:
- Hand washing sinks were adequately equipped with hot/cold running water, liquid soap, and disposable paper towels.
- Sanitizer dispenser dispensed 200 ppm QUATS solution. Test strips were available on site.
NOTE: Ensure the dispenser is run for some time before filling in the sanitizer pails. Use the test strips to test the concentration to ensure 200 ppm QUATS is maintained.
- 3-compartment sink was equipped with functional plugs.
- Coffee machines and soda dispensing machines were in good sanitary condition.
- General sanitation was satisfactory.

Storage:
- Food is stored at least 6" off the floor.
- Stainless steel racks are used for dry storage.
- Containers are labelled and dated.
- Items are covered inside coolers.

Pest Control:
- No signs of pest activity noted at the time of inspection.

Administration:
- Manager and staff on site have Food Safe level 1 certification or equivalent.

NOTE: Ensure temperature logs are kept up to date.

COVID-19 Safety protocols are in place.
