Observation (CORRECTED DURING INSPECTION): Bacon found tightly wrapped in large portions in walk in cooler. CORRECTED DURING INSPECTION.

Corrective Action(s): Review proper cooling techniques with staff.
When cooling large portions either use ice bath, ice wand or portion up into smaller containers. Try to spread out pieces if possible. Do not keep lids tight fitting; always open lids slightly allowing for steam/heat to escape and cold air to penetrate to item.

Observation (CORRECTED DURING INSPECTION): Multiple Violations:
1) Containers in dishpit area storing clean utensils require cleaning. Food Debris has accumulated in storage containers.
2) Ice scoop stored in dirty container. This container requires routine cleaning. Discuss with Staff.
3) Beverage dispensing gun stored in carriage. Fruit fly eggs found inside edge of carriage. This area requires routine cleaning. Discuss with staff.
4) Vegetable slicer stored in clean area and put away as "Clean" with tomato debris on equipment. This item requires proper cleaning and sanitizing after each use. Discuss with staff.

Observation (CORRECTED DURING INSPECTION): Multiple Violations:
1) Purses and lunch bags found in food preparation area - CORRECTED DURING INSPECTION - These items are to be stored outside of food preparation areas as they are dirty. Discuss with staff
2) Raw meat stored next to raw tomatoes - CORRECTED DURING INSPECTION - Items rearranged. Raw eggs found in dessert cooler and raw cauliflower on shelf storing raw meat. Discuss proper storage of raw and ready to eat food items with staff.

Observation: Fruit flies observed. Amount of fruit flies has decreased since last inspection however attention needs to be focused on deep cleaning as infestation can increase in upcoming warmer months. Discuss a cleaning schedule with staff.

NOTE: The rodent traps are not all set properly. Some traps have been moved to less effective locations. Ensure that when a trap has been moved it is placed back up against the wall.

Observation: General sanitation requires improvement. Shelves, coolers, floors, handles, equipment all require a thorough cleaning. Much grease and food debris has accumulated. Ensure staff are routinely cleaning these areas.

Observation: Multiple Violations:
1) Middle Grill area Cooler (sandwich cooler) door is not tight fitting. Air gap exists.
2) 3 Coolers are leaking water into the bottoms (Bar cooler, Grill cooler, Stand up cooler in back drive in area)
3) Paper towel dispensing unit is broken (replacement on order and unit does work)
4) Lids of several containers are broken and require replacement.
5) Grill Handsink is leaking water from bottom plumbing

Corrective Action(s): Have coolers that are leaking and one that is not tight fitting serviced.
Install new paper towel dispensing unit once it arrives
Replace all broken lids
Have plumber repair handsink that is leaking
