308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) The high temperature dishwasher not working, it would not start, Staff stated it just started not working this morning. Staff indicated that they are manually washing dishes in the 2-comp sink.
2) The front service 2-comp food prep sink is unsealed around the faucet. Water is leaking and pooling in the cupboard under the sink. This will attract and breed pests.
3) The paper towels dispenser at the front 2-comp sink is broken, staff are unable to dry their hands.
Corrective Action(s): 1) Immediately call a company to repair the dishwasher so it operates as per manufacturer's specification and reaches a temperature of 180F or hotter during the rinse cycle. Manually washing and sanitizing dishes in the back 2-comp sink MUST occur. Staff must wash dishes dishes with hot water & soap, rinse with hot water, and then soak in a bleach and water sanitizing solution (in the 2nd sink basin).

2) Repair the front service faucet so it is secured and sealed, to prevent water from leaking under the sink.

3) Repair or replace the broken paper towel dispenser with a new one, so there always is paper towel at the sink for use.

Comments

A routine inspection was completed, the following observations were made:
- Coolers 4C; freezers -19C; and hot holding units 50C (non-hazardous foods); and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Cloths stored in bleach and water sanitizing solution, [Cl2] was 200ppm. Staff are aware they must change the solution every 2 hours. Good job.
- Foods stored in food grade containers; covered; labeled; date coded; foods stored in groups; and foods store 6" off the floor on shelves or racks.
- General sanitation level is good. No signs of pests.
- FoodSafe certified staff present. Staff indicated their certificate expires in 2025.
- No expired foods in use or for sale. FIFO rules being followed.

**A follow-up inspection will occur early next week to ensure the all items have been repaired and are in good working order. Failure to correct all items, will result in the further enforcement actions such as issuing tickets, fines and/or orders.**
