Observation (CORRECTED DURING INSPECTION): Sanitizer solution for general prep surface disinfection not available. 200ppm Quats prepared in buckets by the operator at the time of the inspection. Prep surfaces to be sanitized using this solution.
Corrective Action(s): Ensure to have 200ppm Quats available at all times during operation. Have all prep surfaces sanitized prior to initiating any food prep in the morning, after each possible contamination and every 2 hours during operation.

Routine inspection conducted:

- Handwash station adequately supplied with liquid soap, paper towels and hot/cold running water.
NOTE: Ensure to have the wall-mount dispenser filled. Liquid pump soap could be used for now as discussed at the time of the inspection.
- Coolers operating below 4'C; freezer operating at -18'C.
- Dishwashing sink equipped properly.
- No evidence of pest activity observed.

General sanitation requires improvement. Refer to above. Follow-up inspection to be conducted on Tues, Sep 28, 2021.
