Observation: Cereals and grains were stored on wire racks with their original packagings inside the dry storage room. Since there has been pest activities noted in the past and rodent droppings were still found, these food items are prone to contamination. Rodents can chew through the bags.
Corrective Action(s): Put all cereals and grains that were in the original packaging inside tightly fitted food grade containers with lids to prevent contamination by pests.

Observation: Rodent droppings were found in under counter space at the central prep table across from the stoves, behind the corn starch bins. More droppings were found behind the wheeled flour gins in the dry storage area.
Corrective Action(s): Clean and sanitize affected areas with 200ppm bleach solution (1 tablespoon in 1L of water). Let it soak for 5-10 minutes then wipe up with paper towel and discard.

Observation: There was a leak at the pipe next to the dishwasher. A bucket/plastic tray was used to contain the leak.

Comments:
-Walk-in cooler: 2-4C.
-Walk-in freezer was adequate. Foods were frozen solid.
-Thermometers were available for all cold-holding units.
-Ice machine was clean with scoop stored outside in a sanitary condition.
-High temperature dishwasher at final rinse at plate's level was at temperature of 75.4C.
-3-compartment sink was available with sink plugs.
-Sanitizer (QUATS) was at 200ppm at dispenser and buckets. Ensure all sanitizer buckets contain 200ppm. Re-make the solutions using the dispenser on a regular basis.
-Pest control program was in place. Traps contained no pests.
-All foods were stored on wire racks, off the floor, in food-grade containers with lids and date stamped.
-Temperature logs were available and up-to-date.
-All equipment were clean and kept in sanitary conditions.
-Vent hood was clean.
-Door seals were installed to keep pests out of the premises.
-Handwash stations had liquid handsoap, hot & cold running water and single use paper towels.
-Staff was actively washing hands as depicted by amount of paper towels in garbage bins.
-Foodsafe level 1 certified staff was on duty.
-Staff washroom was clean and equipped with handsink with liquid handsoap, hot & cold running water and single-use paper towels.
-Permit was posted.
-Pest control records were available.
-Can opener was clean.
