Observation (CORRECTED DURING INSPECTION): Observed marinated paneer and butter chicken stored at room temperature. Operator informed they opened 2 hours ago. Internal temperature of the marinated paneer and butter chicken measured 12.8C and 13.4C internal temperature respectively.
Corrective Action(s): Transfer aformentioned items into a cooling unit able to hold and air ambient temperautre of 4C or lower. All cold potentially hazardous foods must be stored at 4C or lower.

Observation (CORRECTED DURING INSPECTION): Can opener blade observed to have food debris. Food preparation counters observed to have food debris.
Corrective Action(s): Clean and sanitize the aformentioned item. Can opener blade must be clean and sanitized after each use. Food preparation counters must be cleaned and sanitized after each use or every 2 hours which ever is lesser.

Observation (CORRECTED DURING INSPECTION): Chlorine sanitizer buckets measured at <50ppm chlorine. Operator informed that it was made last night. Operator informed that they ad 1 tbs to 40L water in the 3rd compartment sink for sanitation.
Corrective Action(s): Prepare chlorine sanitizer buckets to measured at 100-200ppm chlorine. It must be prepared on a daily basis and replaced every 2 hours. 3rd compartment sink for sanitation of equipment must be 1tsp to 1L water (i.e.: 1/4 cup to 20L water) to ensure proper sanitation of equipment when manual ware washing. Provided operator with manual warewashing poster.

Observation: Exhaust hood vents near the walk-in cooler observed to have built-up of grease. Preparation cooler doors, seams, and shelving unit observed to have built-up of food debris. Food debris and plastic scrapes observed underneath front of house counters, stand-up coolers, and preparation cooler.
Corrective Action(s): Clean and sanitize the aformentioned areas. Exhaust hood vents should be cleaned weekly to prevent grease build-up. Preparation coolers, seams, and shelvings , and underneath hard to reach areas must be cleaned daily. Corrected by: March 30, 2023

Routine Inspection conducted today.

Handwashing sinks well equipped with hot and cold running water, liquid soap, and paper towels.
3-compartment sink available for manual dishwashing. Bleach on-site.
Prep coolers and walk-in cooler measured at 4C or lower. Hot-holding unit measured at 60C or higher. Undercounter freezer measured at -18C.

TO DO: Purchase ice wand to ensure proper cooling of large batches (40L) of gravies. Corrected by: March 30, 2023.
