Observation: Sanitation is poor throughout facility.
Corrective Action(s): Clean and sanitize all equipment and work surfaces frequently including prep coolers and steam tables. Clean all walls, floors, garbage cans and shelving in kitchen and walk-in cooler. Clean items piled at back door and all floors adn shelves in storage room.

Walk-in cooler at 4 Celcius - good
Quat sanitizer at 200 ppm - good
Provide documentation to inspector by Mon, Nov 14th for all sauces stating proper storage temperatures.
All sauces that require refrigeration must be stored at 4 Celcius. Ice bath is not maintaining 4 Celcius at this time.
Provide FOODSAFE Certificates for staff if they aare not working on a shift with another certified food handler.
