Observation (CORRECTED DURING INSPECTION): Upper deck kitchen: Sauces and batters on ice are not at 4 C/40 F or colder (50 F food temperature measured).
Liquid egg is being stored unrefrigerated.
Corrective Action(s): Sauces and potentially hazardous foods are to be discarded after 2 hours if held above 4 C/40F.
Keep accurate time records for these items and discard after 2 hours.
Additional equipment to ensure adequate cold holding of food in the upper deck kitchen is required.
Failure to follow your food safety plans will result in progressive enforcement.

Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)] (Upper deck: Three door apps prep /drawer cooler is not keeping food at 4 C (7-8 C).
Bar cooler and salad prep coolers are also keeping food above 4 C.
Sauces on ice and fish batter on ice food temperatures are also above 4 C.
Drawer cooler by grill was not shut and air temperature is above 4 C. Although at the back of the unit the temperature did go down, the food temperature in the drawers was above 4 C.

Follow up:
Equipment has been serviced.
Three door apps prep/drawer cooler is now keeping food at 4 C or colder.
Bar cooler is only for lower risk foods (no milk). Salad prep cooler is at 4 C.
Temperatures are being monitored and recorded.
Bar cooler and appy cooler on second floor have been serviced.
