All cooled foods discarded.

All foods are to be cooked as needed and hot held above 60 C prior to service.

Do not place cold food into a food warmer, food warmer is not intended to cook food.

Food items are to be cooked to 74 C before placing in food warmer to remain above 60 C.

To prevent microbial growth potentially hazardous foods such as meat products, cut vegetables, eggs and high moisture grains (soft noodles, soft rice) must be stored at 4 C or colder, unless needed for immediate preparation.

Mouse traps removed from pest control deployment sites and stored on piping under sinks.
Corrective Action(s): Premise back door is to be kept closed to prevent pest entry and only kept open when receiving deliveries.

Mouse traps are to be re-deployed as per pest control technician's direction.

Observation: Mouse droppings observed in the following locations: on pop syrup rack and boxes, behind ice machine, inside cabinets below pop dispenser, point of sale, and soup warmer, and on floor under front service counter.

Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.
