Observation:
At time of inspection, the exhaust hood filters were removed for cleaning. There is accumulated food, dust, and grease inside the exhaust canopy ducts. This is a fire hazard and could attract pests.
Corrective Action(s):
Immediately schedule a professional exhaust hood company to clean and service the unit. Professional cleaning and service of the unit shall be done regularily. Ensure a service sticker is placed on the unit, so staff are aware when the next service and cleaning is needed.

Comments

A routine inspection was completed:
- Coolers 4C or colder; thermometers present; and temps recorded daily.
- Hand sinks stocked with liquid soap, paper towels and running hot and cold water.
- Quats sanitizer in spray bottles, and 3-comp ware washing sink had strength of 200ppm.
- Low temperature dishwasher had [Cl2] between 50-100ppm during the rinse cycle.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups; and food stored 6" off the floor on racks, shelves or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good.
- No signs of pests.
- All surfaces, equipment, and utensils are in good working order.
- Staff possess a valid FoodSafe Level 1 certificate or a recognized, equivalent certificate.
