Observation (CORRECTED DURING INSPECTION): 0ppm bleach sanitizer detected in both kitchen and front bar area.
Corrective Action(s): Directed operator to remix the sanitizer so there is 100ppm chlorine available. Remember to check and remix the sanitizer more frequently so there is adequaate sanitizer for immeidate use.

Observation (CORRECTED DURING INSPECTION): 1) Raw meats were stored above a container of cooked beef tendon. 2) A damp cloth is used to cover spring roll ingredients. 3) A spoon was stored in a container of ice in the freezer. 4) Not all foods are covered after use.
Corrective Action(s): 1) Please remember to store raw meats on the bottom shelf, above ready to eat food. 2) Use clean, damp paper towel to cover food instead, or syran wrap. Damp cloth is not cleanable and sanitary, so refrain from using it to cover food directly. 3) Use a new spoon to grab ice from container in freezer, as the spoon should not be stored in ice to prevent ice contamination. 4) All foods covered after use.
