- Chlorine residual is detectable when measured from the dispenser in the dishwasher; however, 50ppm is not achieved at plate's surface at the end of cycle.
**ENSURE THAT 50ppm CHLORINE RESIDUAL IS DETECTED AT PLATE'S SURFACE. Continue with manual dishwashing for kitchenware. (single use utensils used for foods served to customers)
- The operator noted that the temperatures of the prep cooler & upright cooler measured 4C in the morning. However, at the time of inspection, temperatures were at 9C for the prep cooler and 10C for upright coolers. Potentially hazardous foods (ie dairy) were removed.
**DO NOT STORE POTENTIALLY HAZARDOUS FOODS IN THESE COOLERS UNTIL IT IS CONFIRMED THAT THEY ARE ABLE TO MAINTAIN TEMPERATURES AT OR BELOW 4C.

The operator noted that the coolers and the dishwasher will be serviced again. Follow up inspection will be conducted.
