- within the ice machine
- on the walk-in cooler walls
- on the fan covers of the walk-in cooler
- on plastic containers within the walk-in cooler)

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (
1) High temperature dishwasher measured 40C at the final rinse cycle at the time of inspection.

2) (CORRECTED DURING INSPECTION) Detergent was being used in the sanitizing bucket in place of bleach.)
Comments

- High temperature dishwasher reached 73C at the final rinse cycle after hot water tank was turned up. Obtain a waterproof thermometer and ensure that the dishwasher is tested at least twice a day. Keep and maintain a sanitation log for the dishwasher - the dishwasher must measured at least 71C at the final rinse cycle
- Sanitizer measured 100ppm quats in the bucket
- Most cleaning has been completed - please continue to upkeep the areas noted
- Temperature log to be kept - EHO to email templates to the operator
- Receipts for the ling cod provided
