- Cooked pearls stored in room temperature with no time tracking.
Corrective Action(s):
- Staff stated that the pearls were cooked more than 2 hours ago. Product discarded at the time of inspection.

Observation:
- Freezer by the prep sink at the back kitchen is obstructing the sink.
Corrective Action(s):
- Remove the freezer in this area.

Observation:
- Rodent droppings observed on the floor/corners in the fridge/freezer area (kitchen). Recent pest report from 2024 April suggests mice and cockroach activity is continued.
Corrective Action(s):
- Ensure to facilitate deep cleaning of the kitchen during the renovation. It is a good opportunity to have another spray treatment done since the store will be closed.

Observation:
- Grease & debris build up observed underneath & behind the cook line.

- Ensure floors are deep cleaned during the renovation period.

- Lights from the ventilation hood are in working order.

Comments

- All handsinks are fully equipped.
- All coolers at 4C or below.
- All freezers at 0C to -17C.
- Hot holding at 60C or above.
- Bleach sanitizer observed at 200ppm.
- Low temperature dishwasher had 50ppm chlorine from the final rinse water. Staff stated that the hot water booster unit will be replaced during the renovation.
- Foodsafe certified staff on site.

*Staff stated that the store will be closed starting tomorrow for renovation for about a month. Ensure all perishable food items stored inside coolers are used or discarded today. Ensure all corrective actions listed above are completed before re-opening.
