- Handsinks (deli prep room, chicken prep room, cooking room) supplied with liquid soap, papertowels, hot and cold water.
- Deli now uses recently implemented "coloured robe" system - staff handling raw chickens in chicken prep room MUST wear blue robes and aprons and must change robes and aprons before entering deli area (white robe area). Robes are laundered off-site by Canadian Linen.

- Deli Prep Room Ambient Temperature: 8 deg C
- Chicken Prep Room Ambient Temperature: 10 deg C
- Traulsen Blast Chiller: 1 deg C
- Cooling processes, monitoring, and corrective actions reviewed with deli manager - no concerns noted.
- Traulsen blast chiller provides time and temperature logs. Temperatures are taken at 3 points.

- Daily temperature monitoring records appear maintained and up-to-date.
- Food handling practices for raw and cooked chicken in cooking room reviewed with deli manager. No concerns noted.
- Food storage practices appears satisfactory. Storage is organized, food is protected from contamination.
- Wiping cloths stored in 200 ppm Quats sanitizer. 200 ppm Quats sanitizer also available in spray bottles.
- Proper manual warewashing procedures observed. 200 ppm Quats sanitizer used for sanitizing food equipment.
- General sanitation of premises appears satisfactory.
- No pest activity noted.
