Fried onions stored at 63C and pies at 79-81C today. Temperature logs are up to date and condiments are recorded on erasable charts for 2 and 4 hour holding. Cleaning improved in the kitchen exhaust and floors; juice machine properly cleaned. Dry storage de-cluttered and reorganized. Please ensure to regularly maintain sanitation in these noted areas.
