Observation (CORRECTED DURING INSPECTION): Hand wash sink (combined with two-compartment sink) lacked paper towels at beginning of inspection.
Corrective Action(s): Paper towels were restocked in the dispenser. Ensure that you always have functioning paper towels when kitchen is in operation.

Observation: General facility needs further cleaning, especially in the following areas:
- Significant sweeping and decluttering needs to occur in the dry storage area downstairs
- Areas underneath sink fixtures in the kitchen and underneath tables need to be thoroughly swept, including around the dish pit

Routine inspection conducted.

1. Temperatures
- Stand-up cooler at 3C in kitchen
- Stand-up cooler in back storage area (adjacent to kitchen) at 3C
- 4-compartment cooler at 3C
- Walk-in cooler at 2C
- Walk-in freezer at -15C
- Stand-up freezer at -13C *NOTE: Freezer is cluttered and there is significant accumulation of ice. Ensure that you defrost the freezer to remove accumulating ice*

2. Hygiene and Sanitizing
- Hand wash station adequately stocked with hot/cold running water, liquid soap. No paper towels present - stocked at time of inspection
- Sanitizer solution produced at time of inspection at 200 ppm quaternary ammonium compound. Dispenser is functional and fully stocked. Logs for dishwasher and sanitizer solution, as well as temperatures, were up-to-date today
- Low-temperature dishwasher sanitizes at final rinse cycle of 100 ppm
- Knives and utensils are generally stored in good sanitary condition

3. Storage
- Food products generally kept off the floor - good
- Shellfish and seafood covered with saran wrap. Shellfish tags available for raw oysters

4. Pest Control
- No signs of recent and visible pest activity at time of inspection
- Last inspection occurred on Jan 22, 2019 - mechanical traps were reset during the inspection

5. Administrative
- Permit available, permit fee was paid and most recent decal received was attached to the permit
- Head chef has FoodSafe 1 renewed on Feb 7, 2019
