Observation (CORRECTED DURING INSPECTION): Observed potentially hazardous foods (ie. pork in soup) hot held at 50C. The food was hot held for <2hours. The operator was directed to reheat the soup to 71C and hot hold at 60C.
Corrective Action(s): Ensure that all potentially hazaroud foods are hot held at 60C or above. Use the probe thermometer to check temperatures.
