hot holding more than 60 C.
handwash stations well stocked.
Sanitizer in buckets at 200 to 400 ppm and at main feed from sinks the same.

Dishwasher slow to get to minimum water temperature parameters. Increased from 134 F to 157 F wash cycle, and between 177 and 190 F final rinse temperature - Only after about 10 cycles.
**Make sure staff cycle the dishwasher enough times that the wash water temperature is at least 150 F. This will allow booster to get final rinse water to a temperature of 71 C at plate. Unit got there, but it took ten cycles.

Premises well maintained at time of inspection.
