Follow up inspection: -Operator stated that they had the walk-in-cooler assessed by a technician yesterday who informed them that the compressor was new from last year and that it is supplied with enough gas. -Operator stated that they had turned off the walk-in-cooler recently for 1.5 hours to clean it and are suspecting that is why the walk-in-cooler was at 7.8 degrees C at the time of the follow up inspection. Code 308 is still outstanding from the routine inspection. -Continue keeping all cold potentially hazardous food inside the pizza cooler (at or below 4 degrees C) until the walk-in-cooler can be maintained at or below 4 degrees C (40 degrees F). -Make sure the walk-in-cooler is maintained at or below 4 degrees C; Correct immediately. A follow up inspection will be conducted tomorrow.
