*Follow-up inspection conducted for issues listed in last report.
*Permit posted on wall in location visible to customers.
*Room-temperature storage of potentially hazardous foods appears to have improved. Note: one container of raw chicken was still stored in the ice chest. Avoid this as a routine practice, unless the food is properly sealed and can be buried in the ice. Keeping containers on top of the ice will not allow sufficient cooling.
*Hot holding of chicken cutlets was at > 60 C. Operators have increased temperature of left side of flat iron. Ensure this is maintained.
*Knives and utensils generally stored in clean condition.
*Thermometer has been installed in sushi prep line cooler.
