Observation (CORRECTED DURING INSPECTION): Observation : 1) Meat slicer sharpener housing has buildup
of lubricant, oil, and metal shavings.
2) Staff indicated sharpener is cleaned on spot after use
but not dissassembled

Corrective Action(s): Corrective Action : Dissassemble slicer and clean thoroughly.
Metal shaving or oil may contaminate food.
In use equipment must also be thoroughly cleaned
at least every 4 hours.

Observation (CORRECTED DURING INSPECTION): Observation : Staff observed washing hands with gloves on.

soap and dried with disposable paper towel

> 15cm from ground
Don not use handsinks for food prep. Handsinks
are for handwash only.
Do not store used utensils in dry storage area
